Selection Criteria
We understand the seasonal nature of livestock supply, and work with our farmers to meet the following preferred selection criteria:
Prime Steer
- Prime Steer or Heifer
- Dressed carcass weight between 180 and 360kgs
- P1 or P2 grades
- pH less than 5.8
- Must be HGP free
- Must qualify for Quality Mark Certification
Prime Lamb
- Prime Lamb – preference for wether and ewe lambs
- Dressed carcass weight between 13.4 and 23kgs
- Y, P, T grades
- Must be HGP free
- Must qualify for Quality Mark Certification
- We also have a market for prime butcher ewes with carcass weights between 20 and 30kgs.
Premium Pork
- Full range of weights (but typically between 65 and 80kgs)
- Compliant with all Animal Welfare Codes
Goat
- Carcass weights between 7 and 9kgs for local trade
- Carcass weights between 9 and 18kgs for a limited export programme
